Crispy on the outside and soft-n-fluffy on the inside, oven backed potatoes are one of the best side dishes that can go very well with any meal.
You can make oven roasted potatoes without any special grocery shopping, by just using spices and other basic ingredients from your kitchen.
Why I Love This Recipe
These oven roasted potatoes are very easy to make. Especially, when you are confused about side dish for the meal, these oven baked potatoes work like a charm.
Tips: You really do not have to stick to the same spices and herbs. Feel free to change or add more spices and herbs of your choice. Be creative! But, make sure to use garlic powder instead of fresh garlic cloves.
You can use any kind of potato for roasting. I personally use Idaho potatoes. Also, I prefer not to peel potatoes skin as it has the flavors and good fibers. It’s your choice to keep the potatoes skin.
Idaho potatoes are large in size, but if you are using small potatoes then you can just cut them in half size. If you are using large potatoes then cut them into 1″ (one inch) size pieces.
Ingredients for Oven Roasted Potatoes
Potatoes – 2 lbs. Idaho Potatoes. You can use any kind of potatoes.
Garlic Powder – 1 teaspoon garlic powder. You can use fresh garlic cloves but it might get burned in oven so try not to use fresh garlic.
Thyme – 1 tablespoon
Basil – 1 tablespoon
Rosemary – 1 tablespoon
Paprika (Red Chili Powder) – 1 teaspoon
Black Pepper powder – 1/2 teaspoon
Salt – to taste
Olive Oil – 2 tablespoons
How to Roast Potatoes
Oven roasted potatoes are one of my favorite side dishes. You will be surprised, but I use them as biting while having a drink before dinner too. Roasting potatoes are easy and simple.
Wash potatoes and cut them into approximately 1″ pieces. It’s an optional, but if you have time then soak potatoes in water for 20 minutes.
Dry potatoes from outside before adding seasonings such as spices and herbs plus olive oil.
Pre heat oven to 400°F, once ready bake it for 40 to 45 minutes. You must check after 40 minutes just to make sure potatoes are cooked inside. Potatoes are little tricky, as same kind of potatoes may get cooked at different time. But 40 to 45 minutes is the sweet spot.
Serve as side dish with any meal – goes well with grilled or baked Chicken and fish.

Oven Roasted Potatoes Recipe
Ingredients
- 2 lbs Potatoes Cut them into approximately 1" pieces. Soak them for 20 minutes if you have time.
- 1 tbsp Garlic Powder
- 1 tbsp Thyme
- 1 tbsp Basil
- 1 tbsp Rosemary
- 1 tsp Paperika
- 2 tbsp Olive Oil
- 1/2 tsp Black Pepper
- Salt Salt to taste
Instructions
- Take 2 lbs. (pounds) potatoes. Wash potatoes without peeling and cut them into 1" pieces.
- This step is optional, but if you have time then soak diced potatoes in water for 20 minutes.
- Dry potatoes from outside to mix with spices and herbs.
- Add thyme, rosemary, basil, salt, black pepper, paprika and olive oil on potatoes.
- Mix well to coat on each diced potatoes pieces.
- Start oven and pre-Heat oven to 400 F
- Put aluminum foil on oven tray and coat little oil evenly on surface.
- Arrange marinated potatoes in single layer on aluminum. Make sure that potatoes pieces do not touch each other.
- Place tray in oven and bake it for 40 to 45 minutes. Make sure to check after 40 minutes to make sure potatoes are roasted from inside or not.
- Serve as side dish with meal. You can serve it with sour cream or cheese.
