Oven Roasted Potatoes Recipe
Crispy on the outside and soft-n-fluffy on the inside, oven backed potatoes are one of the best side dishes that can go very well with any meal.

Potatoes
Cut them into approximately 1" pieces. Soak them for 20 minutes if you have time.

Instructions
Take 2 lbs. (pounds) potatoes. Wash potatoes without peeling and cut them into 1" pieces.
This step is optional, but if you have time then soak diced potatoes in water for 20 minutes.
Dry potatoes from outside to mix with spices and herbs.
Add thyme, rosemary, basil, salt, black pepper, paprika and olive oil on potatoes.
Mix well to coat on each diced potatoes pieces.
Start oven and pre-Heat oven to 400 F
Put aluminum foil on oven tray and coat little oil evenly on surface.
Arrange marinated potatoes in single layer on aluminum. Make sure that potatoes pieces do not touch each other.
Place tray in oven and bake it for 40 to 45 minutes. Make sure to check after 40 minutes to make sure potatoes are roasted from inside or not.
Serve as side dish with meal. You can serve it with sour cream or cheese.
Notes
You can use fresh herbs as an alternative. Also, potatoes are little tricky so make sure to check after 40 minutes so that potatoes do not get burned.
